
"For Kofta"
Take 250 grams Paneer and 3-4 medium sized potatoes and grate it properly
Add a pinch of black paper, 1 tsp Coriander powder, 1/2 tsp garam masala, 2 tbsp corn flour, 1/2 inch Ginger, 1-2 Green chillies chopped and salt as per taste.
Mix & Knead the mixture well and Make small balls out of the mixture (you can fill the mixture balls with dry fruits in between)
Then lightly coat the balls with cornflour (dust off excess cornflour) keep the balls aside at room temperature for 5-10 min before frying
Fry the balls on medium heat until golden brown.
"For Gravy"
In a pan add 3-4 medium sized diced Onion, 1-2 Green Chillies, 1/2 Cup Cashew nuts and 1 Cup water and Boil it for 7-8 min.
Cool the mixture down completely and grind into a thick paste (remove the excess water before grinding)
Take a new pan add 1 tbsp oil, 1 tsp Jeera (cumin seeds), 2 Green Elachi,1 Black Elaichi, 3-4 Cloves (long), 1 inch Cinnamon stick (Dalchini), 1 nos Bay Leaf, 1 inch Ginger Chopped and Stir it properly.
Add the Cashew and Onion paste and Cook until the paste is thick.
Add 1/2 cup Fresh Cream and 1 tbsp sugar(can also add whipped cream but if using whipped cream then don't add sugar as whipped cream is already sweet)
Keep stirring and Cook for 2-3 min.
Now add 1 tbsp Coriander powder, 1/4 tsp black pepper, Half cup Curd (whisked) and salt to taste. Cook until Oil separates (it will become thick)
Add some Water to adjust Consistency as required
Lastly add 1 tsp Garam masala and 1 tsp kasuri methi, Mix it and bring to boil Your Gravy is ready, Before serving heat the gravy and add Koftas.
