Tri Colour Dal-e-Pakwan recipe

Ingredients & process to make Dal:


Take 1 cup of chana or tur dal, wash dal and soak it for an hour

Put soaked dal in a cooker

Add 1/2tsp of turmeric powder and salt according to your taste.

Add little water and close the lid of the cooker.

Wait until two whistles.

Open the lid, check the texture of dal, it should be tender but not mushy.



Ingredients & process for marinating dal:


Take a pan and heat 1 tsp of oil

Add 1tsp Cumin seeds

Add 1tsp of mustard seeds and

Pinch of hing

Add the tempering to dal.


Dal is ready!!



Ingredients and process to make Pakwan:


Take 2 cups of Maida

Mix the flour with salt, sufficient water and make a dough.

The dough should neither be too hard nor too soft.

Let the dough rest for 15 min.

Later, divide the dough into 3 portions.

1 portion will be plain white, 2nd portion will be mixed with beetroot juice for red colour (boiled beet) and 3rd with spinach or coriander juice for green colour.

Roll out each portion like chapati and cut it into rectangular shapes.

Prick the surface with fork/ knife, so that it doesn’t puff out.

Heat the oil till smoking point, slide in the Pakwan and carefully fry it on medium or low flame till it turns crisp and golden in colour.


Tri-colour Pakwan is ready!!


We will require Green chutney and Imli chutney to add the taste to Dal Pakwan.

I have tried experimenting with cucumber chutney in place of regular green coriander chutney.



Ingredients and process to make cucumber chutney: (Bonus Recipe)


One diced cucumber

1tsp lemon juice

1 tbsp coriander chopped

1/2 tsp roasted cumin powder ( jeera powder)

Salt to taste

Grind all the above in a mixture grinder till it becomes a semi-thick paste.


Cucumber chutney is ready!!



Now for the presentation:


Take one plain white plate

Put dal on it in a circle form and place plain pakwan on it.

Add dal, some chopped tomato, onion and capsicum.

Add both chutneys, chaat masala and lemon juice then place another layer of pakwan (green) on it then again follow the same procedure as earlier

Finally, place the last layer of pakwan (red) and garnish it with some curd and fresh coriander leaves.


Delicious Dal Pakwan is ready to be served & savoured!!
